1/2 cup chopped red onion
1 tablespoon olive oil
12-16 ounces roasted red peppers drained & chopped
1 16-ounce can diced tomatoes with juice
2 tsp minced fresh garlic
1/2 tsp Aleppo pepper or crushed red pepper
1/2 cup chopped fresh cilantro
zest & juice of 1 lemon
10-16 ounces fresh cod, halibut or tilapia, cut into 1" pieces
Heat olive oil in 3-qt saucepan, add onion & saute over medium heat until onions are soft & starting to brown. Add red peppers, tomatoes with juice, garlic & red pepper flakes. Cover & simmer 10-20 minutes over medium heat, until garlic is cooked and flavors are well-blended.
While stew simmers, zest & juice the lemon & chop the cilantro. Rinse fish & pat dry with paper towel. Cut fish fillets into 1" pieces.
Add zest, lemon juice & cilantro; then add fish pieces & gently stir to combine. Cover & simmer about 7-10 minutes or until fish is barely turning opaque. Stir & season with salt & pepper to taste. Garnish with more cilantro if desired.
